Lake Tahoe’s Historic Camp Richardson Decks the Halls and Rings in the New Year with Festive Prix Fixe Dining
If you’re wondering what to make this Christmas or New Year’s Eve, we have you covered: make reservations and leave the cooking and cleaning to us. For years, families and loved ones have come to Camp Richardson to enjoy the holidays, and the Beacon Bar & Grill offers the perfect setting – bedazzled with twinkling lights and a jaw-dropping view of Lake Tahoe – to relax, dine and celebrate the season.
Enjoy Christmas at the Beacon with an exclusive four-course prix fixe menu for $45 on December 25th, served from 11:30am – 6pm (along with the regular menu for favorites you know and love). Start with your choice of appetizer: French onion soup, topped with toasted crostini and melted Gruyere and Parmesan cheeses; or the house-made butternut squash ravioli, stuffed with a blend of winter spices and ricotta cheese, finished with a portabella mushroom cream sauce. Then dig into the second course, the Beacon’s winter salad; chock full of mixed greens, mandarin oranges, cranberries, sweet potato purée, red onion, toasted almonds and tossed in a Meyer lemon vinaigrette. The entrée options make for tough decision making. Will it be the USDA Choice Prime Rib, infused with roasted garlic, cooked to perfection and served with au jus and horseradish cream sauce, accompanied by parsnip mashed potatoes and bacon-wrapped asparagus? Or perhaps the roasted half game hen with orange-saffron glaze, served with Chanterelle mushroom risotto and green bean squash casserole? Either way, you may find yourself letting out a “Ho, ho, ho!” afterwards. And that’s ok. We present a delicate blackberry Elderflower crème brulee for dessert, crafted by our team of culinary elves – or chefs, as you may call them.
On New Year’s Eve, the Beacon will be serving a festive five course menu for $75 December 31st, served from 6 – 10pm, complete with a glass of sparkling wine. First, enjoy a sausage and white bean minestra (like a hearty minestrone soup, but better). The second course will delight seafood lovers with their choice of Clams Casino: fresh clams topped with finely chopped onion, bell pepper and bacon, baked with Parmesan cheese; or Diver Scallops, seared to perfection atop a fennel puree and micro greens, finished with a pomegranate glaze. We present a strawberry spinach salad served with Feta cheese, fresh strawberries, Applewood smoked bacon, candied walnuts, and tossed in a creamy strawberry vinaigrette for the third course. At this point of the evening, it may be time to take a stroll outside to stretch and get ready for the main event: your choice of Beef Wellington—USDA choice filet roasted to perfection in a classic Danish dough, accompanied by roasted root vegetables and parsnip mashed potatoes; or a seafood stuffed Maine Lobster topped with citrus vinaigrette, served with broccoli cauliflower casserole and a Chanterelle mushroom risotto, and for those who missed it during our Christmas feast, we present a third option of a roasted half game hen with orange-saffron glaze, served with Chanterelle mushroom risotto and a green bean squash casserole. For dessert, we’ll serve a tasteful assortment of truffles, accompanied by a glass of sparkling wine to toast 2016 and welcome the new year.
